I have been connecting analog cameras to the Husky Hybrid and noticed that is the Camera Settings there are different H.264 profiles:

Baseline
Main
High
Main CABAC
High CABAC
Main CAVLC
High CAVLC

What are the differences between these profiles? I can't find any documentation about this.

these are the options for the video encoder sitting inside the NVR.
The actual encoder is a third-party piece of hardware. You can find more info on the encoder here:

But apparently, they do not list anything on the H.264 modes...

On a more general level, CAPAC and CAVLC are various encoding algorithms:

They are part of the H.264 standard:
