Are there limits to how many cameras an Open Network Bridge server can handle ?

As a static configuration (i.e. linking x cameras to a server in the XProtect system configuration) AND/OR dynamically (i.e. efficiently serving x RTSP streams from x cameras at the same time).

Can I set 100, 500, 1000 camera to a unique ONB server instance ?

Is there a Milestone document settling this ?

Static limitation, as you call it - no.

Dynamically - yes, there is a limitation. Take a look at this forum thread for more info.
